What’s yummier than a sugar cookie?
A SUGAR COOKIE SANDWICH!
Candy hearts will always reign supreme as my favourite Valentines candy (those little quips always get me) and so every year I end up making candy heart sugar cookies. This year I made them specifically for a cookie box collaboration.
Here is this year’s take:
Candy Hearts Cookie Sandwiches
Cookies
– 1 cup butter
– 1 cup sugar
– 1 egg
– 1 tsp vanilla
– 2 tsp baking powder
– 2 and 3/4 cups flour
Icing
– 3 tbsp meringue powder
– 4 cups confectioners sugar (sifted)
– 5-6 tbsp water
Filling
– 1/4 cup guava paste
– 1/4 cup cream cheese
– 1/4 cup confectioners sugar
Mix butter and sugar, then add egg and vanilla. Separately combine all the dry ingredients (for the cookies) and slowly blend them into the wet. Roll onto floured surface and cut out your shapes. Bake at 400 degrees for 8 minutes or until lightly golden. Let the cookies cool completely.
Make your icing by combining meringue powder and sugar. Using a mixer slowly add water and continue mixing until icing has stiff peaks. Add desired colouring. Decorate half of the cookies and let the icing dry completely before moving on.
Once your filling ingredients are blended, assemble the sandwiches by icing the filling onto a undecorated cookie and topping it with a decorated one! (I felt like that step was super obvious, but I don’t want anyone to say that I didn’t tell them how to do it!)
